10/23/19 – Casino Queen Debuts New Fall Menus Featuring Innovative Culinary Techniques

Casino Queen is rolling out its seasonal lineup of signature dishes for fall and new in-house desserts to offer guests more options for a winning dining experience than ever before. Since joining the popular casino directly across the river from the Gateway Arch, Executive Chef Alex Eusebio has revamped the entire food and beverage operation to create a variety of dining experiences that are sure to have diners feeling lucky no matter which of the four restaurants they choose.

For those choosing the elegance of a night out at Prime Steakhouse, the AAA Diamond Award-winning steak and seafood restaurant, Chef Alex continues to raise the stakes in the dining game by introducing a new cooking technique that will take Casino Queen’s cuisine to a whole new level. Sous vide cooking, a French term for low-temperature, long-time cooking, is a trendy way of cooking that is unique to Casino Queen and produces results that are impossible to achieve through any traditional cooking technique. This new method slowly poaches protein, resulting in infused flavor and incredible texture, and guests can be among the first to try the tender and flavorful reverse-seared President’s Cut Steak or Chicken Marsala. With other delectable dishes on the menu, such as the cedar plank salmon and roasted beef marrow bone with roasted caramelized onion marmalade and crostini, there’s something for everyone to savor. The fine-dining experience wouldn’t be complete without the chocolate fondue for two, including pretzels, seasonal fruits and house-made pound cake.

Market Street Buffet offers a delightful array of well-known dishes from cultures around the world at an unbeatable price. For added convenience, its newest feature available this fall is Market Street To Go, allowing guests to take their favorite combo meals on the run – including various cuts of fried chicken and biscuits with sides like macaroni and cheese, potato salad, cole slaw, baked beans and more. Other fan-favorites include the soup of the day, Queen’s Burger and turkey or roast beef paninis. Earlier this summer, Chef Alex also launched an in-house dessert program, offering a variety of specialty cakes, cupcakes, cheesecakes and more at the buffet.

Seasonal changes at SEVENS include an ode to Canada with a poutine entrée made of crisp waffle fries topped with cheese curds and brown gravy. The fall comfort food doesn’t stop there, with Chef Alex introducing a southern style pork chop fritter to the menu, served on a brioche bun with house-made garlic aioli. For dessert, SEVENS will serve a sweet potato maple cheesecake and a s’mores lava cake that is sure to have taste buds dancing. Guests can always satisfy their appetite by sharing the SEVENS appetizer platter and the popular Neptune platter, or any of their original specialty dishes, including the SEVENS Signature Burger. New beer and food pairings help diners to select the best brew to accompany each bite.

For “Early Risers” or those hungry for “The Main Event,” Deli & Chips will have a comprehensive farm to table concept using fresh, all-natural ingredients from proteins, dairy, seasonal produce and artisan fresh baked breads.
